Ingredients
Dry Ingredients
- 1 ¾ cups flour
- ¾ cup sugar
- ½ teaspoon baking soda
- zest of 1 lemon
Wet Ingredients
- ¼ cup lemon juice (or a bit less for a less intense lemon-y flavor)
- ⅓ cup olive oil
- ½ teaspoon vanilla extract
- powdered sugar for dusting on top

Preheat your oven to 180°C / 350°F.

Add all of the dry ingredients to a bowl and mix.

Add the wet ingredients to the dry and mix with a rubber spatula or your hands (recommended). It should form a large dough ball.

Shape the dough ball into a square, about ½ inch tall. Cut the square into 4 even rows, then rotate and repeat. This will create 12 equal dough squares.

Roll the 12 squares into balls and arrange onto a parchment lined baking sheet.

Bake for 10 minutes for a perfectly gooey center or up to 12 minutes.
